Punjabi Curry
with Raisins, Peas, Coconut, and Brown Rice
As with most of our kits, this can be made in a single skillet, so cooking and cleanup are a breeze!
With sweetness from natural raisins and the lean protein of chicken, this dish is a terrific balance of flavor and sound nutrition. Our curry is also abundant in vitamins, and the spices we selected are rich in antioxidants and have properties that may reduce inflammation and support pro-biotic activities.
To make this dinner, just brown 1 1/2 lb of chicken breasts in a skillet, add the seasoning mix, coconut, and raisins, and continue cooking in the skillet for another 20 minutes. No hunting for ingredients, no measuring, and no chopping-- everything has been done for you.
If you'd prefer to make this as a vegetarian dish, simply replace the chicken with tofu and it will be equally delicious!

Grocery List:
1 1/2 lbs chicken, 1 T oil
Cooking Instructions:
1. Heat 1 Tbsp OIL in large skillet over medium heat. Add PROTEIN (see Suggestions) and stir occasionally for 6-8 mins. or until cooked through. Remove PROTEIN from skillet and set aside.
2. Add PEAS and 3 ½ cups WATER to warm skillet over high heat. Bring water to boil, then reduce heat to medium-low and simmer 6 mins.
3. Add RICE / SPICE PACK to skillet and simmer 12 mins.
4. Add prepared PROTEIN and simmer 5 mins. or until rice and peas are tender.
5. Season to taste with SALT.

This product was way too sweet. 12g of sugar is the same as a serving of my coconut milk yogurt. Please cut back on the sugar, as otherwise everything would taste fine.Value Ease of Use Nutritional Quality Taste
COOKSIMPLE NOTE: There is no added sugar in this kit. The sugar you are tasting comes from the natural sugars in unsweetened raisins and the sugar that's naturally occurring in rice as a carbohydrate. We work hard to balance all naturally occurring sugars with fiber so that the body processes them more slowly and more naturally. If you prefer a less sweet version, we'd suggest adding additional curry powder, increasing the protein (tofu or chicken or your choice), or removing some raisins.
The only kits we add sugar to are the Skillet Lasagna and the White Bean Chili, and we add a total of 3 grams to each serving of Lasagna to balance the bitterness of the spices and 1 gram to each serving of White Bean Chili to balance the cayenne pepper. (Posted on April 12, 2013)

I was afraid that this wouldn't make enough food for the two of us (my husband and I), but it made a lot of food once prepared, and was filling. I used tofu in place of the chicken, and I also made lentils on the side and spinach (i.e., for variety; I always make side dishes). I also put very ripe coarsely chopped fresh tomatoes on the side. It all made for a really delicious combination.Ease of Use Nutritional Quality Taste Value
To prepare it, I water-sauteed the tofu (in place of using oil) but I don't think it was necessary to even do that. Next time I will just add the tofu when I add the rice and spice mix. I wound up adding the tofu at that time anyway instead of at the end, and it was delicious because the tofu absorbed the flavor of the sauce. Yummy!
This was easy and delicious,and I will be adding it to our weekly dinner rotation. I loved the fact that there was no salt added, as I do not salt my food. I would love to see every mix that can be veganized, in a no-salt-added version. This was spiced perfectly and did not need any salt at all. Based on this, I would love to be able to try every mix! I didn't know what to expect, I only know I love curry. I prepared this for myself, my 17 yr old, and my 5 and 2 yr old. (Our normal suppers include bologna, pb&j, whatever they will eat which is notmuch) I didn't tell them what I was making, just served it up. My first bite had me a little concerned that it would be too spicy for the little ones but I didn't say anything (and added fresh ground black pepper to my own). My 5 yr old complained once that it was spicy and wanted more juice, but she kept eating... in fact we all kept eating!!! I kept eating saying, "This is so good. I wish I had another box right now. Oh My Gosh, This is SO YUMMY" When we were down to one scoop in the pan, (and I had already had 3 helpings) I asked my 17 yr old if she wanted the last bit hoping she'd say no... but she wanted it. You really don't need the chicken. I made this per the instructions and happened to add some lima beans (butter beans) on the side. We decided we liked the lima beans mixed into the rice (I've read somewhere where whole grains and Legumes make a complete protein and you can skip the meat -- that definitely works with this meal kit because it is great even without the chicken).Value Ease of Use Nutritional Quality Taste
We didn't tell my husband, who salts everything normally, that it was low sodium. He agreed the flavors as prepared were very flavorful and didn't need any additional salt.

Did not know what to expect. Great dish and I love the fact that it does not have almost any salt so you can salt it the way you like it! Most of the packed foods are very salty, I do not like those at all. This one is very good, mild curry taste - raisins and peas......for some reason it is a very good combination.
