2 cups soy beef crumbles
3 cups hot water
1 tbsp. safflower oil
¼ cup Espagnole Pepper Mix
¼ cup taco spice mix
8 flour tortillas, 8 inch
½ cup iceberg lettuce
8 oz. low-fat shredded cheddar
cheese
½ cup salsa picante, Medium
Combine soy crumbles and Espagnole blend with hot tap water and let soak for 10 minutes. In a medium sauté pan, add safflower oil and heat. Add soy crumbles and Espagnole and mix. Add taco seasoning and follow directions on package. To serve, place ¼ cup of taco mix on a tortilla, top with shredded lettuce, cheese and salsa.
