New Orleans Jambalaya
with Brown Rice and Peppers

As with most of our kits, everything is mixed and made in a single skillet, so cooking and cleanup are a breeze!
We use a whole grain brown rice for added fiber to help fill you up (and may even lower cholesterol and aid in the health of your heart). And tomatoes are an excellent source of lycopene which is a vital antioxidant.
To make this dinner, just brown the chicken, toss in the shrimp and sausage, and add a can of tomatoes to our rice and seasoning mix. Simmer for 20 minutes. No hunting for ingredients, no measuring, and no chopping-- everything has been done for you.
If your tastes are adventurous, try this with a spicy andouille sausage; if you prefer the mild side, go for a chicken sausage. The chicken and shrimp lend great flavor and texture to this dish, but it holds its own without either.

Grocery List:
1 lb shrimp, 8 oz sausage, 15 oz tomatoes
Cooking Instructions:
1. Heat 1 Tbsp OIL in large skillet over medium heat. Add PROTEIN (see Suggestions) and stir occasionally for 6-8 mins. or until cooked through.
2. Add TOMATOES, 2 ¾ cups WATER, and RICE / SPICE pack to skillet; bring to boil over high heat.
3. Reduce heat to medium-low and simmer, stirring occasionally for 18 mins. or until rice is tender.

This was awesome! Not too spicy, loads of flavor, and very easy. I used regular andouille sausage because I couldn't find the kind made with chicken, but I love it. You could go milder with just regular sausage too. (Posted on March 24, 2011)Ease of Use Nutritional Quality Taste Value
