All the flavors of the islands are packed into this delightful dish. Tender chicken breasts are seasoned with three kinds of pepper, and flavored with garlic, onions and paprika. Our unique calypso rice provides just the right balance.
Classic Chicken and Rice!
With the perfect balance of spices, this marinade brings out a fantastic "blackened" flavor!
Chicken is not only an ideal alternative to red meat, it is also an excellent source of protein and cancer fighting Selenium and vitamin B3.
This meal also includes Calypso Rice - brown rice wonderfully seasoned with yellow curry powder, onions, coconut, and sliced almonds. This sweet rice makes for a perfect balance to the chicken's slightly spicy marinade.
This meal offers all-around great flavors ranging from sweet to spicy, so even those with a milder palate will enjoy!
To Make:
Just place chicken breasts in a large bowl, combine the spice packet (included) with juice of one lime, 2 T soy sauce and 1 ½ tsp of Worcestershire sauce, pour over chicken, marinate for 15 minutes, and grill or saute.
Meal Kit Contents:1 bag of spice mix, 1 bag of rice/spice mix, and the perfect blend of salt, sugar, brown sugar, paprika, onion powder, black pepper, garlic powder, white pepper, cayenne pepper, rice, onion, almonds, and coconut, soy sauce.

| Cooking Instructions | Begin preparing CALYPSO RICE (included), per instructions. While water for rice is boiling, combine SPICE MIX (included), 4 packets SOY SAUCE (included), 1 ½ tsp. WORCESTERSHIRE SAUCE, the juice of 1 LIME, and ½ C WATER in a small bowl. Stir well. For any thick CHICKEN BREASTS, make 2 shallow cuts in center of breast, about ½” apart, then make another 2 shallow cuts across the first two cuts, to form 2 “X”s. Heat 1 T OLIVE OIL in large frying pan over medium heat. Place CHICKEN BREASTS in pan and pour marinade mix over all. Bring mixture to a simmer and cover, cooking for 4 mins. Flip chicken breasts and cook for 4 additional mins. Flip chicken and continue cooking for 2-6 mins, depending on thickness, until no pink remains or internal temp is 165˚ F. Fluff prepared rice with fork. Pour chicken and marinade over rice to serve. Calypso Rice cooking instructions: In medium pot, bring 2 ½ C water to boil over high heat. While water is coming to boil, begin cooking chicken per instructions. Once water is boiling, stir in RICE (included). Reduce heat to low; cover and simmer for 5 mins. Remove pan from heat, stir, cover again, and let stand for 5 mins before serving. |
