Product Description

Tasty beans and robust brown rice blend with the rich, tangy flavors of Roma tomatoes, oregano, olives and capers. This hearty dish is a perfect meal that’s ready as quickly as it’ll be enjoyed!

The base combination of beans and rice creates a high quality vegetarian protein that’s packed with fiber and, while low in fat, is very filling. To increase the protein content even more, you may add a lean beef for a more traditional Spanish dish, or tempeh for a vegan dish.

To make this dinner, cook 1 lb of leanest beef or tempeh (both are optional) in a skillet, add the seasoning mix and tomatoes, and add rice. Simmer for 15 minutes. No hunting for ingredients, no measuring, and no chopping-- everything has been done for you.

Meal Kit Contents: 1 package of bean and spice mix, 1 package instant brown rice.

Optional Ingredients you may provide: 1 lb. ground beef, 1 lb. tempeh, 1 T capers, 1/3 cup chopped green olives.

Ingredients: Black beans, peppers, onions, tomatoes, tomato powder, sea salt, black pepper, cumin, chili pepper.

Meal Kit Ingredients Long Grain Brown Rice, Dried Kidney Beans, Dried Bell Peppers, Dried Onions, Tomato Powder, Organic Oregano, Organic Ground Black Pepper, Sea Salt.
Groceries Needed: 15 oz can diced tomatoes, 1 lb. ground beef (opt), 1 T capers (opt), 1/3 C green olives (opt)

Cooking Instructions Optional: if using beef, heat 1 T OLIVE OIL in large saucepan over medium heat, then add 1 lb. GROUND BEEF and cook until no pink remains (approx. 10 mins); remove pan from heat and drain remaining fat from pan. Off heat, in a large saucepan (the same pan, if using beef), add ½ C WATER, TOMATOES and SPICE/BEAN MIX (included); return to medium heat and bring to a simmer. Cover and continue to simmer, stirring occasionally, until red beans are tender and no liquid remains (8-10 mins). Optional: Add 1 T CAPERS and/or ⅓ C OLIVES and/or ½ C RAISINS. Gently fold rice into beef mixture and serve immediately.
